Pea Microgreens

Known by a few names: pea microgreens, pea shoots, or tendril peas. Pea microgreens are the tender young plants that are miniature versions of the adult pea plant, but larger than most other microgreen varieties.  Pea microgreens have a delicate, crisp texture that adds a satisfying crunch to dishes. They offer a sweet, fresh pea flavor, reminiscent of sugar snap peas. Pea shoots are packed with vitamins and minerals, including vitamin C, iron, and folate. Like other microgreens, they are rich in antioxidants and enzymes. Add pea microgreens to salads, sandwiches, or smoothies for a burst of flavor and texture.
